Hendra's carbonic maceration process — 70–80 hours of anaerobic fermentation under CO₂ — completely transforms the Tim Tim variety's natural profile, replacing the earthy heaviness typical of Aceh with startling rhubarb acidity and bitter cacao depth. One of only a handful of truly experimental processors in the region, Hendra has built something rare: Indonesian specialty that competes on a global stage.
