WHERE AND WHO
Andrés Salaverría has had a passion for coffee growing since he was a child, His family has been dedicated to coffee growing for more than 100 years. In 2011 takes the farm direction with his father and their objective has always been the diversification of its products and at the same time always be on the lookout for new trends in processes in other Coffee producing countries in order to be able to replicate them from its beloved country El Salvador. The San Francisco Farm, one of the most important for the family business, is not only home to a Coffee producing region, but also to a Natural forest reserve.

FROM THE CHERRY TO THE BEAN
All the cherries are hand picked and selected. After begins the fermentation process in sealed barrell without oxygen and at the end of the cherries are partially depupled and let them dry on african beds. During the drying process the farmer alternates between open and closed stages. When the coffee is opened and spread evenly, normal drying occurs on the surface. In addition, periodically, the coffee is very well covered with material, as in a sleeping bag. This technique is known a Anaerobic Honey Sleeping Bag and greatly increases fermentation and allows you to maintain the high density of the grain, fruity and vinous notes usually accompany this technique.

ABOUT THE VARIETY

TABI

This variety  was developed in Colombia by Federación Nacional de Cafeteros de Colombia  to improve coffee quality and disease resistance, is a hybrid variety created by crossing three other coffee varieties: Typica, Bourbon, and Timor. Name "Tabi" means "good" in Gaumbiano dialect.
