WHERE AND WHO
Agua Sarca farm is located in the Nuova Segovia region, in Nicaragua, at 1400/1500 masl. Is a 69 hectars farm completly dedicated to coffee growing. In this farm we can find 7 different beans variety and more than 300 coffee tree.
His founder Isacio J. Albir, starts his coffee journey more than 30 years ago and, now a days is one of the most innovative coffee grower in Nicaragua.
FROM THE CHERRY TO THE BEAN
After the selection of the ripest cherries, all of them are anaerobic fermended (without oxygen) that can allow to express other aromas and flavours of the coffee. After the fermentation the cherries are dried at open air with the "Sleeping Bag" tecnique. This drying process alternate period of time where the cherries are exposed to the air, to other periods where the cherries are covered with plastic to mantein moisture and let the fermentation proceed.
ABOUT THE VARIETY
MARACATURRA
This variety is an hybrid between Maragogype e Caturra. Discoverde in the late 1800 nowadays is a common variety in Brasil, El Salvador and Nicaragua. Coffee trees grows bigger and with bigger cherries. Can be very suscetible to Roya (a diffuse leaf disease). The most common aromatic profile is characterized by tropical fruit and bright acidity.
